From the supplier: The Yarnell Ice Cream Co of Searcy, AR, has created a frozen dessert product, with no sugar and no fat. The product, called Guilt Free, is available in many flavors. Yarnell researchers used NutraSweet brand sweetener. Litesse, a bulking agent made by Pfizer Ltd, was used to replace the bulk normally provided by sugar. The resultant product tasted delicious and had a smooth creamy texture, but consumer feedback indicated that the product was too firm for easy scooping. Company technologists next added Simplesse, NutraSweet’s natural fat-replacer, which made the product easier to dip.
